Senior Chemist - Quality Control (Dairy Plant)Department

Quality Assurance / Quality Control (QA/QC)

Reporting To: Quality Manager / Plant Head

Location: Bahjoi, Sambhal (U.P.)

Job Purpose

The

Senior Chemist

shall be responsible for

implementation, monitoring, and verification of quality and food safety systems

in accordance with the

Food Safety and Standards Act, 2006

, associated

FSS Regulations

, and

Schedule 4 requirements

. The role ensures that

milk, ghee, paneer, dahi, and other dairy products

conform to statutory, safety, and quality standards at all stages of processing.

Key Responsibilities (Aligned with FSSAI Requirements)

1. Raw Material & Product Testing (Schedule 4 - Part II)

Conduct and supervise

mandatory quality and safety tests

for: Raw milk (platform tests, compositional and adulteration tests) Processed milk Ghee Paneer Dahi / fermented milk products Perform analysis for: Fat, SNF, protein, moisture, salt Acidity, pH Free Fatty Acids (FFA), peroxide value (ghee) Adulterants as per FSSAI guidelines Ensure sampling and testing frequency meets

FSSAI standards and internal SOPs

2. Microbiological Control & Hygiene Monitoring

Ensure microbiological testing as per product category requirements: TPC Yeast & Mold Coliforms Pathogens (where applicable) Verify sanitation effectiveness through: Swab tests Water quality testing Monitor compliance with

GMP & GHP

practices under Schedule 4.
3. Food Safety Management System (FSMS)

Implement and maintain

HACCP / FSMS plans

aligned with FSSAI regulations. Identify, monitor, and document: Critical Control Points (CCPs) Operational Prerequisite Programs (oPRPs) Conduct root cause analysis and corrective/preventive actions (CAPA) for deviations.
4. Documentation & Record Control (Audit-Critical)

Maintain up-to-date records for: Daily lab testing and batch-wise reports Calibration and verification of lab equipment Chemical and reagent inventory Cleaning and sanitation records Ensure

traceability and recall readiness

as required under FSSAI. Prepare and review

Certificates of Analysis (COA)

.
5. Regulatory Compliance & Audits

Ensure ongoing compliance with: FSSAI standards and notifications License conditions Act as

key audit representative

during: FSSAI inspections Internal audits Third-party and customer audits Assist in timely closure of

non-conformances (NCs)

.
6. Laboratory & Equipment Management

Ensure calibration, validation, and upkeep of: Milk analyzers Gerber centrifuge pH meters Weighing balances Incubators, ovens, water baths Ensure safe handling, storage, and disposal of chemicals as per safety norms.
7. Training & Competency Development

Train laboratory and production staff on: Food safety & hygiene Testing methods and SOPs Personal hygiene requirements (Schedule 4) Support

FoSTaC training initiatives

within the plant.
QualificationsEducational Qualification

B.Sc / M.Sc in Chemistry, Dairy Chemistry, Food Technology, or Dairy Technology

FoSTaC certification

(preferred)
Experience

Minimum 5-10 years

in a

dairy processing plant QC laboratory

Proven experience handling

FSSAI inspections and audits

Hands-on expertise with

milk, ghee, paneer, and fermented dairy products


Competencies (Audit-Relevant)

Strong knowledge of

FSSAI Act, Rules, and Regulations

Thorough understanding of

Schedule 4 (GMP & GHP)

Excellent documentation and traceability skills High integrity in quality reporting Leadership and cross-functional coordination ability
Authority & Accountability

Authority to

approve or reject raw materials and finished products

based on test results Accountable for

laboratory accuracy, compliance, and audit readiness


Working Conditions

Full-time, plant-based role Shift duties as per production schedule
