About the Role:



We are seeking a passionate and skilled

Robatayaki Chef

to join our culinary team in Bengaluru. The ideal candidate will have hands-on experience in traditional Japanese Robata-style grilling, a strong understanding of Japanese ingredients and cooking techniques, and a flair for creating a memorable guest experience through authentic open-flame cooking.

Key Responsibilities:



Prepare and cook dishes on the Robata grill according to traditional Japanese techniques and modern presentation styles. Maintain a clean, organized, and safe Robata station at all times. Ensure consistent food quality, taste, and presentation in every dish served. Collaborate with the kitchen team to create seasonal Robatayaki menus and specials. Select and manage the preparation of fresh seafood, meat, and vegetables. Engage with guests at the Robata counter to provide a unique and interactive dining experience. Ensure hygiene and food safety compliance as per local FSSAI and international standards. Assist with inventory management, ordering, and waste control related to the Robata section. Train junior chefs or commis assigned to the Robata station.

Requirements:



Proven experience (minimum 3-5 years) as a Robatayaki Chef or similar role in a Japanese or fine dining restaurant. In-depth knowledge of Japanese cuisine, especially Robata grilling techniques. Strong knife skills and familiarity with handling premium ingredients such as seafood, wagyu, and seasonal produce. Ability to work in a high-pressure kitchen environment while maintaining quality and speed. Familiarity with kitchen equipment maintenance and grilling tools used in Robatayaki. Good communication and interpersonal skills, especially in guest-facing roles. Culinary degree or equivalent certification is preferred.

Preferred Qualities:



Experience working in international kitchens or Japanese restaurants in India or abroad. Passion for Japanese culture and cuisine. Strong sense of discipline, cleanliness, and attention to detail. Ability to innovate while respecting traditional techniques.

Working Conditions:



Location: High-end restaurant / hotel in Bengaluru Working hours: Rotational shifts; weekends and holidays may be required Competitive salary and benefits based on experience

Pay: ₹120,000.00 - ₹140,000.00 per month
