Work closely with projects team and architect on Kitchen layout and equipment setup.
Play active role on having a relationship with food vendors and keep exploring ways on improving quality / reducing costs as the volume increase.
Manage day-to-day Kitchen operations and Culinary team
Monitor Execution of Daily Food Service, Quality, Technique, Portion, Presentation and Food Cost Control
Examines the freshness of ingredients, conducts food tastings and evaluates food presentation.- Monthly
Implement and maintain Culinary Excellence Standards.
Understand customer satisfaction levels and ensure that feedback is captured and used to improve dining services.
Track raw material cost and quality while managing vendors
Estimate food consumption and requisition of food purchase.
Standardize production recipes to ensure consistent quality.
Provide active support for Catering Proposals, Menu pricing, and Menu Innovation as per requirement.
Assist Operations in Menu Planning and Costing for Special Event Catering.
Responsible for planning menus for all units.
Reinvent outlet menus at regular intervals or as and when required in collaboration with Head Ops & Marketing.
Ensures that the kitchen team strictly adheres to statutory regulations when it comes to food storage, handling and preparation and other safety and sanitation codes involving dining utensils, kitchen equipment and overall cleanliness.
Prepare SOPs for Kitchen processes and ensure implementation and adherence to the same.
Train and manage kitchen personnel and supervise all culinary activities.
Conduct periodic meets with unit chefs to create healthy competition between them and to provide them with necessary timely instructions pertaining to production and related aspects, as required.
Responsible for hiring replacements for kitchen staff
4. Responsible for training all those who work under or with the incumbent in consultation with training Mgr.
To understand completely & conform to all policies, procedures, standards, specifications, guidelines and training programs.
To report for duty punctually wearing appropriate attire
To be fully conversant with the geographical layout of the operation and to know the exact whereabouts of all equipment of an operational nature
To maintain high standards of personal appearance and hygiene at all times
Follow clean-as-you-go policy and keep work area clean at all times.
Sign acceptance for tools, knives, uniforms etc. and pay back to the company for any loss or damage of said equipment.
To maintain a good rapport and working relationship with units, RSC and all other departments and suppliers
To provide courteous, professional, attentive and efficient service at all times towards internal & external customers
To attend and contribute to all staff briefings and other related activities

Pay: ?1,200,000.00 - ?1,350,000.00 per year
