Job Description

1. Raw Milk Quality Testing

Check

fat, SNF, acidity, pH, density

Perform

COB (Clot on Boiling), alcohol test

Test for

adulterants

(water, urea, starch, detergent, antibiotics) Approve or reject raw milk for processing
2. In-Process Quality Control

Monitor quality during

pasteurization, homogenization, fermentation

Check

temperature-time compliance

Control

starter culture activity

(for curd, yogurt, cheese) Ensure process parameters meet standards
3. Finished Product Testing

Analyze

fat, moisture, protein, acidity, pH

Conduct

sensory evaluation

(taste, smell, texture, appearance) Verify

shelf-life stability

Ensure products meet

FSSAI / ISO / HACCP

specifications
4. Microbiological Analysis

Perform

SPC, coliform, yeast & mold tests

Ensure hygienic conditions and product safety Identify contamination sources and corrective actions
5. Chemical & Instrumental Analysis

Use instruments like

MilkoScan, Gerber, Lactoscan

Calibration and validation of lab equipment Maintain chemical inventory and MSDS
6. Hygiene & Sanitation Monitoring

Verify

CIP (Clean-in-Place)

effectiveness Conduct

swab tests

on equipment and surfaces Monitor water quality used in processing
7. Documentation & Compliance

Maintain

QC records, batch reports, COAs

Support

internal and external audits

Ensure compliance with

GMP, GLP, HACCP

8. Handling Non-Conformance

Investigate deviations and product complaints Root cause analysis and corrective actions Coordinate with production and QA teams
9. Training & Coordination

Train production staff on

quality and hygiene practices

Communicate quality issues clearly to manageme
