Oversee operators (mixing, freezer, packing) and helpers.
Ensure production plan for the shift is executed.
Monitor raw material usage vs output.
Quality & Compliance
Enforce hygiene, GMP, FSSC/HACCP practices during shift.
Check in-process parameters (mix temperature, overrun, hardness).
Ensure no cross-contamination, proper allergen handling.
Manpower Handling
Allocate work to operators and helpers.
Supervise cleaning & sanitation after runs.
Report attendance and discipline issues to PM/HR.
Coordination
Liaise with Quality Control for approvals.
Coordinate with Cold Room Incharge for blast freezing/hardening room availability.
Inform Maintenance immediately for breakdowns.
Reporting & Documentation
Maintain shift production logs (batch no, output, wastage, downtime).
Report yield variances, machine stoppages, or unusual incidents.
Hand over pending tasks/issues to next shift supervisor.
