The Production In charge/Manager will be responsible for overseeing daily production operations, ensuring product quality, consistency, and timely delivery. The role involves managing staff, planning production schedules, maintaining hygiene and safety standards, and ensuring smooth coordination between production, outlets and dispatch teams.

KEY RESPONSIBILITIES:
1. Production Planning & Execution
Plan and organize daily production based on orders and demand.
Ensure optimum utilization of manpower, materials, and machinery.
Monitor production processes and adjust schedules as needed to meet targets.
2. Quality Control
Maintain product quality as per company standards and recipes.
Ensure consistency in taste, texture, and presentation of all bakery items.
Conduct regular checks on raw materials and finished goods.
3. Team Management
Supervise, train, and guide production staff, including bakers, helpers, and packers.
Ensure discipline, attendance, and productivity among team members.
Address and resolve staff-related issues in coordination with HR.
4. Hygiene & Safety
Maintain cleanliness and hygiene across all production areas.
Ensure compliance with food safety norms (FSSAI standards).
Conduct regular hygiene checks and coordinate with the housekeeping team.
5. Inventory & Cost Control
Coordinate with the store and purchase departments for timely availability of raw materials.
Monitor wastage and implement measures to reduce it.
Maintain records of daily production and material consumption.
6. Equipment & Maintenance
Ensure all production equipment is functioning properly.
Report any breakdowns immediately and follow up for timely repair/maintenance.
7. Coordination & Reporting
Coordinate with Dispatch, QA, and Purchase departments for smooth operations.
Prepare and submit daily production reports to management.
Participate in regular review meetings and suggest process improvements.
QUALIFICATIONS & EXPERIENCE:
Diploma/Degree in Food Technology, Bakery Science, Hotel Management, or related field.
Minimum 3-5 years of experience in a bakery/food production environment.
Strong knowledge of baking processes, ingredients, and production machinery.
SKILLS REQUIRED:
Leadership and team management skills.
Strong organizational and planning ability.
Attention to detail and commitment to quality.
Basic computer skills (Excel, ERP entry preferred).
Good communication and problem-solving skills.
WORK CONDITIONS:
Full-time 8:00 am to 5:00 pm/ 8:30 am to 5:30 pm, on-site role.
