To manage and execute daily production operations of coconut milk and coconut powder ensuring
quality, yield, hygiene, safety, and productivity
in compliance with
FSSAI, GMP, HACCP, ISO
standards.
Key ResponsibilitiesProduction Operations
Execute daily production plans for
coconut milk extraction, evaporation, spray drying, and powder packing
Monitor production processes to achieve
target output, yield, and efficiency
Ensure correct operation of
grinders, extractors, pasteurizers, evaporators, spray dryers, and packing machines
Control wastage, spillage, and rework during production
Process & Quality Control
Follow SOPs, work instructions, and CCPs as per
HACCP plan
Coordinate with QA/QC for in-process quality checks and batch approvals
Ensure adherence to
Brix, moisture, fat %, microbiological
parameters
Identify process deviations and take corrective actions
Manpower Handling
Allocate manpower shift-wise and line-wise
Supervise operators, helpers, and contract workers
Train production staff on
process, hygiene, safety, and machine handling
Ensure discipline and productivity on the shop floor
Hygiene, GMP & Safety
Maintain plant hygiene, CIP schedules, and sanitation practices
Ensure use of PPE and compliance with food safety norms
Follow safety procedures to avoid accidents and contamination
Support internal and external audits (FSSAI, ISO, customer audits)
Production Planning & Coordination
Coordinate with
Stores, QA, Maintenance, and Packing departments
Ensure availability of raw materials, packaging materials, and utilities
Inform maintenance team about machine breakdowns and preventive actions
Support new product trials and process improvements
Documentation & Reporting
Maintain production logs, batch records, yield reports, and downtime records
Prepare daily production reports and submit to management
Record wastage, rejection, and rework data accurately
Key Performance Indicators (KPIs)
Daily production achievement vs plan
Yield % and wastage reduction
Quality compliance (zero major deviations)
Machine utilization & downtime
Hygiene & audit compliance
Manpower productivity
Educational Qualification
Diploma / B.E / B.Tech in
Food Technology, Dairy Technology, Chemical Engineering, or Mechanical Engineering
Relevant experience in
food processing / dairy / beverage industry
Experience
2-5 years
experience in coconut milk, coconut powder, dairy, or beverage manufacturing
Hands-on experience with
spray drying and liquid food processing
preferred
Skills & Competencies
Knowledge of
food processing, GMP, HACCP, FSSAI
Basic understanding of production planning and yield calculation
Ability to handle manpower and shop-floor operations
Good communication and coordination skills
Problem-solving and decision-making ability
