Job Description

The Pizza Sous Chef supports the Head Chef in managing the pizza section, ensuring high-quality food preparation, consistency, and smooth kitchen operations. The role involves dough preparation, sauce development, baking techniques, team supervision, and maintaining hygiene and food safety standards.

Key Responsibilities:

Assist the Head Chef in daily operations of the pizza kitchen section Prepare pizza dough, sauces, toppings, and bases as per standard recipes Ensure consistency in taste, presentation, and portion control Supervise and train pizza cooks, commis, and kitchen staff Manage inventory, stock rotation, and minimize wastage Monitor oven operations (wood-fired, deck, conveyor, or stone ovens) Maintain cleanliness, hygiene, and food safety standards (FSSAI/HACCP) Coordinate with service staff for timely order execution Handle customer feedback and ensure quality corrections when required Support menu planning, new pizza development, and specials

Skills & Competencies:

Strong knowledge of pizza dough fermentation and baking techniques Experience with Neapolitan, Roman, thin crust, pan, and sourdough pizzas Ability to work in high-volume operations Leadership and team-handling skills Time management and multitasking ability Knowledge of food costing and portion control

Qualifications & Experience:

Culinary Diploma or relevant kitchen experience 3-6 years of experience in pizza or Italian cuisine Minimum 1-2 years in a supervisory role (Sous Chef or Senior CDP)
