Manage daily mise en place - dough stretching, sauce prep, cheese slicing, and toppings
Ensure consistency in taste, texture, and presentation
Maintain proper hygiene and cleanliness of the pizza station
Monitor inventory and coordinate with kitchen staff for replenishments
Innovate and assist in developing seasonal pizza menus
Train junior staff on dough techniques and oven handling, if required
Requirements:
Proven experience with Neapolitan pizza - from dough making (preferably 48-72 hour fermentation) to wood-fired baking
Strong understanding of high-hydration dough and authentic Italian ingredients
Ability to handle a fast-paced kitchen environment
Knowledge of food safety and sanitation standards
Team player with attention to detail and a passion for authentic pizza
