Key Responsibilities:
xc2xb7 Achievement of customer satisfaction and loyalty goals
xc2xb7 Achievement of food & beverage revenue, profit and customer satisfaction goals
xc2xb7 Achievement of employee satisfaction (Gallup) and retention goals
Participates in the development of business strategies for kitchen which are aligned with the overall objectives of the hotel
xc2xb7 Develops and implements business strategies for department
xc2xb7 Monitors status regularly and adjusts strategies as appropriate
Ensures the highest quality of product within cost constraints by managing and overseeing food preparation
xc2xb7 Seeks out sources for fresh food; monitors all produce and meat for freshness
xc2xb7 Ensures adherence to Brand standards of food quality, recipes and preparation
xc2xb7 Suggests daily specials that incorporate seasonal or special order ingredients
xc2xb7 Inspects and ensures the proper set up and readiness of each item on menus
xc2xb7 Maintains product consistency by conducting inspections of seasonings, portion, and appearance of food
xc2xb7 Supervisors proper storage of unused food to minimise waste and maximise quality
xc2xb7 Coordinates service with restaurant and banquet operations
Manages the daily operation of the kitchen
xc2xb7 Coordinates the inventory, purchasing and disbursement of all supplies with the Purchasing Manager
xc2xb7 Ensures that proper sanitation practices are followed
xc2xb7 Recruitment of staff
xc2xb7 Assures proper staffing and adequate supplies for all stations
xc2xb7 Prepares reports summarising Food & Beverage profitability, payroll expense, customer satisfaction, etc.
Monitors and proactively responds to the local marketplace
xc2xb7 Keeps current with local competition
xc2xb7 Takes appropriate action to maintain the competitive status and profitability of the operation
xc2xb7 Adjusts menu periodically to create a point of difference in the marketplace
Develops and implements strategies and practices which support employee engagement
xc2xb7 Recruits and selects qualified candidates
xc2xb7 Provides employees with the orientation and training needed to understand expectations and perform job responsibilities
xc2xb7 Communicates performance expectations and provides employees with on-going feedback
