Roles & Responsibilities of a Manager - Food & Beverage Operations
1.
Operational Management
Oversee daily operations of all F&B outlets (restaurants, bars, banquets, room service, etc.)
Ensure smooth coordination between kitchen, service, and support teams
Monitor service quality and ensure guest satisfaction
Implement and enforce health, hygiene, and safety standards (e.g., HACCP)
2.
Team Leadership & Staffing
Recruit, train, schedule, and supervise F&B staff
Conduct performance reviews and provide ongoing feedback and training
Promote a positive team culture and resolve conflicts
Ensure adherence to company policies and service standards
3.
Financial Management
Prepare and manage F&B budgets and forecasts
Monitor expenses, food & beverage cost controls, and labor costs
Optimize profit margins without compromising service quality
Analyze sales and profitability reports; take corrective actions as needed
4.
Customer Service & Guest Experience
Ensure high levels of guest satisfaction across all F&B touch points
Handle guest feedback, complaints, and special requests professionally
Personalize service to meet the expectations of VIPs or regular customers
Collaborate with marketing to enhance the brand's F&B image
5.
Menu Planning & Coordination
Work with chefs and sommeliers to design creative and cost-effective menus
Ensure variety, seasonality, and alignment with customer preferences
Monitor food presentation and portion control
Support promotions, special events, and theme nights
6.
Inventory & Supply Chain Management
Oversee procurement and inventory control of F&B supplies
Ensure optimal stock levels and timely ordering of supplies
Develop and maintain relationships with vendors and suppliers
Prevent wastage, pilferage, and stock discrepancies
7.
Compliance & Licensing
Ensure compliance with food safety laws, liquor licenses, and labor regulations
Maintain records and documentation for audits
Liaise with health inspectors and government authorities as needed
8.
Strategic Planning & Development
Analyze market trends and competitor offerings
Develop and implement strategies to improve revenue and guest loyalty
Innovate new concepts to stay ahead of industry trends
Collaborate with other departments (sales, marketing, events) for integrated planning
