Job Description

Role Purpose



The Kitchen & Hygiene Manager is responsible for ensuring

safe, hygienic, high-quality food preparation and service

across the institution. The role focuses on

food quality control, hygiene compliance, kitchen discipline, staff supervision, and regulatory adherence

.

Key Responsibilities



A. Food Quality & Safety



Ensure

consistent food quality, taste, and portion control

Conduct

daily food quality checks

(raw materials & cooked food) Monitor

storage, FIFO method, and expiry controls

Ensure compliance with

Food Safety and Standards Authority of India (FSSAI)

norms Maintain food safety records, temperature logs, and checklists

B. Hygiene & Sanitation



Ensure

100% kitchen, dining, and utensil hygiene

Conduct

daily & surprise hygiene inspections

Monitor staff

personal hygiene, uniforms, hairnets, gloves

Coordinate

pest control and deep cleaning schedules

Ensure proper waste segregation and disposal

C. Kitchen Operations & Staff Management



Supervise cooks, helpers, and cleaning staff Manage duty rosters, attendance, and discipline Train staff on

hygiene SOPs and safe food practices

Ensure smooth kitchen operations during peak hours

D. Vendor & Inventory Control



Inspect quality of vegetables, groceries, meat, and dairy Coordinate with suppliers for timely and quality delivery Monitor stock levels, prevent pilferage and wastage Raise alerts for quality deviations or shortages

E. Compliance & Reporting



Maintain

daily inspection reports and registers

Report non-compliance and corrective actions to management Support audits, inspections, and surprise checks Implement management instructions related to food services

Qualifications & Experience



Diploma / Degree in

Hotel Management / Catering / Food Technology

(preferred)

FSSAI FoSTaC certification

preferred Minimum

3-6 years

experience in: Institutional kitchens / hostels / hotels / hospitals / factories Strong knowledge of food hygiene and safety standards

Key Skills & Competencies



Strong

attention to hygiene & quality

Leadership and people management Discipline and process orientation Basic documentation & reporting skills Ability to handle pressure and large-scale operations

Working Conditions



Shift-based work Requires physical inspection and floor supervision Must adhere to institutional discipline and confidentiality
