Location: Indiranagar, Bengaluru. (Copper + Cloves Cafe & Cloud Kitchen)

The Role



The

Junior Pastry Chef

supports the daily production of Copper + Cloves' core baked goods and desserts. This is a hands-on role focused on consistency, accuracy, cleanliness, and efficiency. You will be responsible for preparing all standard pastries and desserts, maintaining daily stock levels, supporting R&D for new items, and keeping the pastry kitchen clean, organised and running smoothly.

This role is ideal for someone who is passionate about baking, eager to learn, and excited to work in a plant-forward kitchen.

Key Responsibilities



1. Daily Production



Bake and prepare bakery and pastry items, including: Banana Bread; Orange Cake; Cookies Vegan raw desserts and gluten-free bakes Breads, crackers Energy balls Granola and other breakfast bakes and jars/parfaits Meal subscription bakes and cookies Cakes baked to order/custom cakes for individuals. Cakes and bakes for desserts. Any future menu, display, meal subscription or catering/event dessert Follow exact recipes and weight measurements to ensure consistency. Prepare mise-en-place for the pastry section daily. Ensure all items are produced fresh and in the correct quantities.

2. Quality Control



Taste and check the texture of all baked goods. Maintain presentation standards in line with C+C style. Ensure all items meet our quality, freshness, and flavour expectations.

3. Stock & Inventory



Monitor stock of ingredients used in pastry production. Inform the Head Chef/Operations team in advance when ingredients are running low. Follow FIFO and labelling procedures for all pastry items. Keep accurate records of daily batch production and wastage.

4. Hygiene & Cleanliness



Maintain a clean, organized pastry station at all times. Follow all food safety, hygiene, and cleaning protocols. Ensure equipment is properly cleaned, maintained and stored.

5. Research & Development (R&D)



Assist in developing new pastries and desserts for the cafe, dinner menu, retail and events. Test recipes, record outcomes and present ideas in a clear manner. Follow a clear R&D process to the letter - document recipes even for first trials, presenting to senior chefs and management, write down feedback as part of round 1, adjust recipe and implement feedback for the second trial, and repeat this until it is approved for menu. Experiment with plant-based ingredients and flavours. Participate in menu development sessions and tasting panels.

6. Teamwork & Communication



Work closely with the Head Chef, DCDP and kitchen team to plan daily production. Communicate clearly about quantities, shortages, or delays. Support the kitchen team during peak hours when required. Maintain a positive, respectful attitude in line with C+C culture.

Skills & Requirements



Culinary School Qualification Basic baking experience (professional min. 6 months) Strong interest in plant-based, health-forward desserts Ability to work creatively without maida, refined sugar and dairy. Good organisational and time-management skills Ability to follow recipes precisely Willingness to learn and take feedback Understanding of hygiene and food safety (training provided if needed)
