THE ROLE
You're second-in-command. When the founder isn't on the line, you run service. You'll manage the team, maintain quality, and help build kitchen systems from scratch. This is a startup - you'll have real ownership and a clear path to Sous Chef as we scale.
RESPONSIBILITIES
Lead daily kitchen operations - prep, service, closing
Execute menu to exact spec - rice, proteins, sauces, assembly
Supervise and train the commis team
Manage prep schedules and daily mise en place
Quality control - taste, presentation, consistency
Inventory management - ordering, stock rotation, waste tracking
Maintain hygiene and FSSAI compliance
Run kitchen during pop-up events
Contribute to menu development and recipe refinement
REQUIREMENTS
4+ years kitchen experience, including supervisory role
Strong fundamentals - rice, frying, grilling, sauce work
Can manage a small team under pressure
Basic inventory and cost awareness
Communication in English and Hindi/Kannada
FSSAI certification or willingness to obtain
NICE TO HAVE
Experience with Japanese or Asian cuisine
Culinary diploma or formal training
SALARY
?45,000 - 55,000 per month (based on experience)
