Job Summary

We are seeking a skilled and passionate Japanese / Sushi Chef to lead and execute the culinary offerings of our Japanese cuisine section. The ideal candidate will have deep knowledge of Japanese cooking techniques (especially sushi, sashimi), excellent knife skills, strong sense of presentation / aesthetics, and the ability to maintain high standards of quality, hygiene, and consistency.

Key Responsibilities

Food Preparation & Execution

Prepare, assemble, and plate Japanese dishes -- sushi (nigiri, maki, sashimi), tempura, ramen, donburi, etc. Ensure proper cutting, slicing, filleting of fish and seafood with precision and care. Monitor freshness, quality, and proper storage of all ingredients. Maintain consistency in taste, texture, portion size, and presentation.

Menu Development & Innovation

Collaborate with management / chef team to plan seasonal menus and specials. Introduce new sushi or fusion dishes, keeping authenticity and market appeal in mind. Adjust menu items based on feedback, ingredient availability, budget constraints.

Kitchen Management & Coordination

Supervise junior sushi chefs, kitchen assistants, and support staff. Allocate duties, train personnel in Japanese cuisine techniques and plating. Coordinate with other sections (hot kitchen, salads, sauces) to ensure smooth service flow. Schedule work shifts, monitor performance, manage rotas.

Inventory & Cost Control

Maintain inventory records for fish, seafood, vegetables, sauces, and other Japanese ingredients. Forecast ingredient usage, order supplies, manage vendor relationships. Minimize waste, negotiate pricing, optimize food cost / margin.

Quality Assurance & Hygiene

Enforce strict food safety, sanitation, and hygiene standards (HACCP, local health regulations). Sterilize utensils, knives, cutting boards, and maintain cleanliness at all times. Monitor cold storage, storage rotations (FIFO), temperature control.

Guest Interaction & Service

Interact with guests (especially in sushi bar / omakase settings), explain dishes, accommodate special requests or dietary restrictions. Ensure guest satisfaction, respond to feedback or complaints courteously.

Equipment & Maintenance

Use, maintain, and inspect kitchen equipment, sushi-related tools, refrigeration, etc. Report any malfunction or safety hazards; coordinate repairs or replacements.
Required Qualifications & Skills

Proven experience as a sushi / Japanese cuisine chef in a reputable restaurant. Deep knowledge of Japanese cooking techniques, sushi styles, classical and modern Japanese dishes. Mastery of knife skills, plating, precision in cuts, handling raw fish. Creative approach to menu development and plating aesthetics. Strong leadership and team-management skills. Excellent communication skills. Good organizational, time-management, and multitasking ability. Ability to work under pressure during peak service hours. Physical stamina (standing long hours, lifting, repetitive motions). Certification in food safety / sanitation (HACCP, etc.) is preferred. Culinary degree / specialization in Japanese cuisine is a plus.
