- Indian CDP (Chef de Partie)

Position Summary:
The Indian CDP is responsible for overseeing a specific section of the Indian kitchen, ensuring consistent food quality, timely preparation, and adherence to hygiene standards. The role demands strong culinary skills, menu understanding, and the ability to train and guide commis chefs.

Key Responsibilities:
1. Food Preparation & Production
Prepare and cook high-quality Indian dishes (North Indian/South Indian/Tandoor as per specialization).
Maintain consistency in taste, portioning, and presentation.
Ensure all mis-en-place is ready before service hours.
Follow standard recipes and portion control guidelines.
2. Kitchen Operations
Manage and supervise commis chefs in the assigned section.
Ensure smooth operations during peak hours.
Coordinate with the Sous Chef for daily menus, specials, and banquet requirements.
3. Hygiene & Safety Compliance
Maintain strict hygiene standards as per FSSAI guidelines.
Ensure proper storage, labeling, and rotation of food items (FIFO).
Monitor cleanliness of workstations, equipment, and utensils.
4. Inventory & Cost Control
Assist in controlling food costs and minimizing wastage.
Check requisitions and ensure proper stock levels.
Report any shortages or maintenance issues promptly.
5. Teamwork & Training
Train and mentor commis chefs on recipes, techniques, and kitchen discipline.
Maintain a positive and professional work environment.
Collaborate with other kitchen sections for smooth service.

Minimum 3-5 years of experience as Indian CDP or Demi Chef.
Strong knowledge of Indian cuisine and cooking techniques.
