Role Overview
The Head of Production - RTE & Snacks will lead end-to-end production operations across the Ready-to-Eat, Ready-to-Cook, and Snacks manufacturing lines. This role is responsible for ensuring high-quality, efficient, compliant, and scalable manufacturing. The ideal candidate must have deep knowledge of food-processing operations, production planning, procurement coordination, quality systems, and all mandatory government licences and audits.
Key Responsibilities
1. Production Management & Execution
Oversee daily production activities for RTE and Snacks categories.
Ensure production targets, timelines, and quality standards are consistently met.
Implement efficient line balancing, process optimisation, and batch-wise output tracking.
Establish and maintain SOPs for all manufacturing processes.
Drive continuous improvement (Kaizen, Lean, Six Sigma preferred).
2. Manufacturing Compliance & Licences
Ensure full compliance with FSSAI standards and food safety regulations.
Oversee all mandatory licences and audits including:
FSSAI Central/State Licence
Factory Licence
Fire & Safety
Pollution Control Board (PCB) compliance
Labour & EHS compliances
Ensure documentation, traceability, FIFO/FEFO, and GMP/HACCP adherence.
Conduct regular internal audits and coordinate third-party audits.
3. Quality Assurance & Food Safety
Work closely with QA to ensure hygiene, sanitation, microbiological safety, and product consistency.
Implement Good Manufacturing Practices (GMP), Good Hygiene Practices (GHP), and Hazard Analysis Critical Control Points (HACCP).
Oversee pest control, cleaning schedules, equipment calibration, and temperature control logs.
4. Procurement & Raw Material Management
Collaborate with the procurement team for timely sourcing of raw ingredients, packaging materials, and consumables.
Approve vendor selection based on technical specs, quality parameters, and cost efficiencies.
Monitor inventory levels and ensure raw material availability as per weekly and monthly production plans.
Reduce wastage and improve yield efficiencies.
5. Production Planning & Coordination
Prepare monthly, weekly, and daily production plans based on sales forecasts and inventory levels.
Coordinate closely with sales, supply chain, procurement, and dispatch teams.
Ensure optimal utilisation of manpower, machinery, and raw materials.
Monitor downtime, OEE (Overall Equipment Effectiveness), and capacity utilisation.
6. Team Leadership
Manage, train, and mentor production supervisors, line operators, and support staff.
Build a high-performance culture focused on safety, quality, discipline, and accountability.
Oversee manpower planning, shift scheduling, and performance evaluations.
Required Skills & Experience
8-15 years of experience in food manufacturing, preferably in RTE, RTC, snacks, FMCG, or QSR industry.
Strong knowledge of food processing technologies, thermal processing, packaging, and shelf-life management.
Thorough understanding of FSSAI, GMP, HACCP, ISO 22000, and factory compliance requirements.
Experience in production planning, procurement coordination, and plant operations.
Strong analytical and problem-solving skills with a process-oriented mindset.
Proven leadership experience managing mid-to-large manufacturing teams.
Ability to work in fast-paced, scale-up environment

Pay: ?363,396.71 - ?900,000.00 per year
