Job Title: Culinary Head

Reports to: CEO/Director of Hospitality
Position Overview
As the Culinary Head, you will be responsible for overseeing all kitchen operations, ensuring exceptional food quality, innovation, and consistency, across the pH4 Food & Beverages group. This role requires a strategic leader who can manage culinary teams, control costs, uphold health and safety standards, and contribute to the overall success of the Group through constant innovation coupled with a high focus on scalability and operational efficiency.
What you will own and be responsible for:
1. Leadership & Team Management
xe2x97x8b Lead, recruit, and mentor kitchen staff to maintain a high-performing team across all outlets and central kitchen.
2. Training & Development
xe2x97x8b Develop and execute training programs to enhance the skills and performance of kitchen staff.
xe2x97x8b Identify training needs and work with external agencies or internal teams to deliver targeted programs.
xe2x97x8b Foster a culture of continuous learning and professional growth within the culinary team.
3. Menu Development & Innovation
xe2x97x8b Design, curate and standardize high quality menus that align with the brand & vision and market trends.
xe2x97x8b Develop and enforce a culture of detailed recipe documentation, updation and ingredient specification to maintain consistency and quality across all outlets and central kitchen.
4. Quality Control
xe2x97x8b Ensure menu items meet food quality, presentation, and taste standards, consistently, across all outlets and central kitchen.
xe2x97x8b Ensure quality of ingredients used meet specifications and are of consistent quality.
5. Kitchen Operations
xe2x97x8b Ensure efficient daily kitchen operations across all outlets and central kitchen.
xe2x97x8b Design, implement and audit kitchen workflows and standard operating procedures (SOPs).
6. Cost Management
xe2x97x8b Develop and manage the kitchen budget, including food costs, labor costs, and overheads.xe2x97x8b Monitor food wastage and implement strategies to minimize waste.
7. Compliance & Safety
xe2x97x8b Enforce health, safety, and hygiene standards in compliance with local regulations.
xe2x97x8b Conduct regular inspections of kitchen equipment and facilities, ensuring staff adherence to safety protocols and food handling practices.
8. New Outlet Setup
xe2x97x8b Collaborate with architects and designers to ensure efficient and functional kitchen layouts.
xe2x97x8b Oversee the setup of kitchen operations, including equipment procurement, installation, and testing.
xe2x97x8b Develop operational plans and workflows tailored to the needs of new outlets.
xe2x97x8b Recruit & train staff and establish SOPs to ensure a smooth and successful launch.

Apart from the standard corporate functions (Management, HR, Finance, Procurement), you will be expected to collaborate closely with:

xe2x97x8f Outlet General Managers for Quality Adherence
xe2x97x8f Projects team for new expansion, improvements, and new initiatives

time and become a part of the citys cultural landscape. pH4 has evolved over the last

beverages, food, and spaces. pH4s primary brand, Toit, is Indias most well-known craft
brewery and pub brand and is currently in Bangalore, Mumbai and Pune with more

Requirements
Qualifications
xe2x97x8f Degree or diploma in Culinary Arts, Hospitality, or a related field.
xe2x97x8f Minimum 15-20 years of experience with significant senior-level experience in 5-
star hotels or international chains or cruise lines.
xe2x97x8f Proven track record of successful menu development and cost management,
with a focus on scalability and standardization.
xe2x97x8f Exceptional culinary skills with a strong focus on innovation and presentation.
xe2x97x8f Leadership and team-building abilities.
xe2x97x8f Strong organizational, time management, and problem-solving skills.
xe2x97x8f Good written and oral communication skills in English.
xe2x97x8f High standards of personal integrity, attention to detail, and boundary lessness.
