Key ResponsibilitiesProduction & Operations
Plan and supervise daily production of
salads, juices, sandwiches, and smoothies
as per production plan
Ensure
consistency in taste, portion size, freshness, and presentation
Manage prep, processing, assembling, and packing activities
Monitor raw material usage and minimize wastage
Ensure timely completion of batches for dispatch
Food Safety, Hygiene & Compliance
Ensure strict adherence to
FSSAI, GMP, GHP, hygiene, and sanitation standards
Maintain
batch records, production logs, temperature records, cleaning checklists
Ensure cold-chain handling for fresh & perishable products
Prepare the unit for internal and external audits
Ensure proper cleaning, sanitation, and pest control practices
Team Management
Lead and supervise production chefs, commis, helpers, and operators
Allocate work and manage shift-wise manpower
Train team on
SOPs, hygiene, food safety, and handling of fresh produce
Monitor attendance, discipline, and productivity
Inventory & Cost Control
Coordinate with stores and procurement for raw material planning
Ensure FIFO / FEFO for fruits, vegetables, bread, dairy, and other perishables
Control food cost and reduce spoilage and wastage
Monitor daily stock consumption and yield
