artisan and commercial bread-making
, including sourdoughs, baguettes, multigrain, ciabatta, focaccia and specialty breads. You will oversee daily production, maintain quality standards, and guide the baking team.
Key Responsibilities
Oversee all bread production from mixing to baking.
Develop and refine recipes for consistent quality and flavor.
Train, supervise, and schedule baking staff.
Ensure all products meet high standards for freshness, taste, and presentation.
Manage ingredient inventory and maintain hygiene & safety standards.
Experiment with new bread varieties and seasonal offerings.
Coordinate with management for production planning and cost control.
Requirements
Good amount of hands-on baking experience (with focus on breads).
Strong knowledge of fermentation, dough hydration, and baking techniques.
Experience with commercial bakery equipment.
Leadership skills and ability to manage a small team.
Attention to detail and passion for high-quality products.
Flexibility to work early morning shifts.
