Food Technologist - Trainee (Ice cream Manufacturing)

Role Overview:


A Food Technologist - Trainee in Gelato/ Ice cream Manufacturing supports the production, and quality assurance of gelato, sorbets, and related frozen desserts. The trainee works closely with the team to ensure consistent product quality, innovation, and compliance with food safety standards.

Key Responsibilities:



1. Production Support



Monitor gelato manufacturing processes, including pasteurisation, homogenisation, ageing, freezing, and hardening. Assist in preparing raw materials according to formulations. Ensure correct batch preparation and adherence to standard operating procedures (SOPs).

3. Quality Assurance & Food Safety



Conduct quality checks on raw materials, in-process mixes, and finished gelato Assist in maintaining compliance with FSSAI, GMP, and HACCP guidelines. Document deviations and corrective actions.

4. Sensory Evaluation



Participate in sensory panels to assess texture, flavour, stability, and appearance of gelato. Help benchmark products against competitors.

5. Process Improvement



Identify inefficiencies and suggest improvements in formulation, texture stability, melting resistance, or cost optimisation. Learn and apply principles of emulsification, stabilisation, overrun control, and fat-protein interactions.

6. Documentation & Reporting



Maintain batch records, formulations, and quality reports. Assist in compiling technical data sheets and specifications.

Skills & Competencies:



Strong understanding of dairy science, food chemistry, and frozen dessert technology. Basic knowledge of stabilisers, emulsifiers, sugars, and functional ingredients. Familiar with pasteurizers, batch freezers, blast freezers, and related equipment. Analytical mindset with attention to detail. Strong communication and documentation skills especillay in Malayalam Eagerness to learn and work in a fast-paced production environment.

Qualifications:



B.Tech in Food Technology, Food Science, Dairy Technology, or related discipline. Internship/experience in ice cream, dairy, bakery, or confectionery industry is an advantage.
