Job Summary
The Production Head is a senior leadership role responsible for overseeing and managing the operations of the commissary department within the organization. This position requires a strong combination of operational expertise, strategic thinking, and leadership skills. The Manager Commissary plays a critical role in ensuring the efficient and effective functioning of the commissary operations, including procurement, inventory management, quality control, and distribution. Additionally, the role involves driving B2B business development initiatives to expand market reach and enhance revenue streams.
Roles and Responsibilities
Food Production Oversight:
Manage and ensure efficient food production operations, maintaining high standards of hygiene, safety, and quality. Work closely with kitchen teams to streamline workflows, enhance productivity, and innovate new product offerings.
Operational Strategy:
Oversee and manage the financial and operational aspects of the commissary. Monitor costs, identify efficiencies, and implement process improvements to optimize expenditures. Drive cost-saving initiatives, negotiate supplier contracts, and ensure overall profitability by effectively managing the P&L of the commissary.
Procurement and Inventory Management:
Manage the procurement of commissary supplies, equipment, and materials, ensuring cost-effectiveness and quality compliance. Work closely with the team to identify reliable vendors and secure timely deliveries. Develop and implement inventory management systems to optimize stock levels, reduce waste, and control costs efficiently.
Quality Control:
Develop and implement stringent quality control protocols to ensure all commissary products adhere to the organization's standards and regulatory requirements. Conduct routine quality assessments, enforce compliance measures, and promptly resolve any quality concerns to maintain product excellence.
Distribution and Logistics:
Oversee the commissary's distribution and logistics operations, ensuring the prompt and accurate delivery of products to retail outlets, catering services, and other designated locations. Streamline distribution routes, manage transportation costs, and maintain effective coordination with internal teams and external partners.
B2B Business Development:
Identify and develop new business opportunities within the B2B segment, including partnerships with restaurants, cafes, and institutional buyers. Drive sales strategies to enhance business growth and expand market presence.
Reporting and Budget Analysis:
Conduct regular reporting and analysis of operational costs. Develop financial reports, track expenses, and identify areas for cost optimization. Provide insights to senior management on budget performance and financial forecasting.
Team Leadership:
Build and lead a high-performing commissary team. Foster a culture of collaboration, innovation, and continuous improvement. Provide training and mentorship to staff to enhance their skills and productivity.
Stakeholder Collaboration:
Collaborate closely with internal and external stakeholders, including marketing, sales, HR and finance teams, to align commissary operations with overall business goals. Ensure proper maintenance of the commissary facility, equipment, and infrastructure to support seamless operations and compliance with health and safety regulations.
Compliance with Local Authorities
: Ensure compliance with local authorities and maintain necessary documentation in collaboration with the quality team. Oversee audits conducted by clients and regulatory bodies, ensuring all necessary records and reports are up to date and meet compliance standards.
Qualifications and Experience
A background in Hotel Management or Culinary Arts.
10+ years of extensive experience in managing and leading large scale operations.
Proven expertise in P&L management, new product development, and change management.
Strong leadership, negotiation, and relationship-building skills.
Experience in B2B sales and business development is a plus.
