The Lab Assistant will support the Quality Assurance department in conducting laboratory analysis, monitoring food quality, and ensuring strict adherence to
FSSAI (Food Safety and Standards Authority of India)
regulations. The role involves food testing, documentation, compliance with Schedule 4 requirements, maintenance of hygiene standards, and assisting in audit preparedness.
Key Responsibilities
1. Laboratory Testing & Analysis
Conduct routine
chemical, microbiological, and physical tests
on raw materials, in-process, and finished food products.
Perform tests such as pH, moisture, fat, ash, acidity, TSS, microbiological plate counts, etc.
Prepare standard solutions, reagents, and maintain cleanliness of the laboratory.
Operate lab equipment like pH meter, refractometer, microbiological incubator, moisture analyzer, and weighing balance.
2. Quality Assurance & Control
Check and verify incoming raw materials and packaging materials as per company and FSSAI specifications.
Monitor CCPs & OPRPs as per
HACCP / FSMS
requirements.
Maintain sample retention and perform shelf-life study testing.
Report any abnormalities to the QA Manager immediately.
3. FSSAI, FSMS & Regulatory Compliance
Ensure compliance with
FSSAI Food Safety & Standards Act, 2006
, Food Safety and Standards (Food Product Standards & Food Additives) Regulations, Schedule 4 Hygiene Requirements, and all applicable notifications.
Assist during
FSSAI inspections, internal audits, and surveillance audits
.
Help maintain mandatory documentation required for
FSSAI Licensing, GMP, GHP, and HACCP
.
4. Documentation & Record Keeping
Maintain laboratory test reports, calibration logs, environmental monitoring records, and batch-wise quality documentation.
Follow SOPs for data entry, record maintenance, and document control as per FSMS requirements.
Prepare quality-related reports and ensure accuracy in all entries.
5. Equipment Handling & Calibration
Conduct routine calibration checks for lab instruments as per schedule.
Report malfunctioning equipment and follow preventive maintenance procedures.
Maintain calibration certificates and equipment usage logs.
6. Hygiene & Safety
Follow personal hygiene and food safety rules as per
FSSAI Schedule 4-GMP/GHP
.
Maintain a clean and sanitized laboratory environment.
Use PPE (gloves, coat, mask, hairnet, etc.) as required.
Eligibility RequirementsEducational Qualification
B.Sc / M.Sc in Food Technology, Microbiology, Biotechnology, Chemistry
OR
Diploma in Food Technology / Food Science / Food Processing
Experience
1-3 years in a food manufacturing QA/QC lab.
Key Skills
Knowledge of
FSSAI regulations
, food testing methods, GMP, GHP, HACCP, and FSMS.
Good analytical and documentation skills.
Ability to follow SOPs and maintain accuracy.
Basic computer skills (MS Excel, lab software).
Teamwork and communication skills.
