Clean, scale, gut, and fillet fish accurately.
Remove bones and unwanted parts as per customer or kitchen specifications.
Cut fish into required portions (whole, steak, fillet, curry cut, etc.).
Hygiene & Safety
Maintain a clean and sanitized workstation and tools.
Dispose of fish waste properly and regularly.
Follow food safety and hygiene standards at all times.
Quality Control
Check the freshness and quality of fish before processing.
Reject spoiled or poor-quality fish.
Customer Service (if in a retail setting)
Interact politely with customers.
Take and prepare customer-specific cutting instructions.
Inventory & Storage
Properly store fish in ice or cold storage to prevent spoilage.
Assist in stock rotation (FIFO - First In, First Out).
Report low stock or spoilage to the supervisor.
Tool Maintenance
Sharpen and maintain knives and cutting tools regularly.
Ensure all equipment is clean and in good working condition.
Support Team Operations
Assist in unloading fish deliveries.
Help with general cleaning and other duties as assigned.
