Key Responsibilities:
Menu Development:
Design and regularly update a contemporary European menu (French, Italian, Spanish, Mediterranean, etc.).
Incorporate seasonal and locally available ingredients creatively.
Work with management to create special tasting menus, events, and wine pairings.
Kitchen Operations:
Supervise day-to-day kitchen operations to ensure food quality, consistency, and presentation meet international standards.
Establish and maintain high levels of hygiene and food safety (HACCP practices).
Control food costs and minimize waste through effective inventory and portion control.
Team Leadership & Training:
Train and mentor local chefs and kitchen staff on European culinary techniques and kitchen discipline.
Foster a culture of professionalism, efficiency, and continuous learning.
Collaborate with HR and Operations to recruit and onboard kitchen staff.
Guest Experience:
Interact with guests when necessary to explain the concept and menu, enhancing the customer experience.
Be visible and accessible during key service hours.
Sourcing & Supplier Management:
Collaborate with procurement to source authentic ingredients from local and international suppliers.
Ensure quality and cost-efficiency of ingredients.
Requirements:
Proven experience as Head Chef or Sous Chef specializing in European cuisine (minimum 8-10 years).
International exposure, preferably experience working in top restaurants in Europe or global cities.
Formal culinary training from a recognized institution.
Excellent leadership, communication, and interpersonal skills.
Cultural adaptability and willingness to work in a diverse team in India.
Strong understanding of international hygiene and safety standards.
Previous experience in setting up or running a high-end restaurant or hotel kitchen is a plus.
