Bong Bilona

is looking for a hands-on Operations Manager to lead the setup and production of our premium A2 Cultured Ghee unit.

This is not a desk job. We need a "Ground Zero" leader who can set up a factory from scratch, manage farmer relationships, and ensure every jar of ghee meets the highest "Danedaar" (granular) quality standards.

Key Responsibilities

1. Plant Setup & Equipment Management:

Lead the selection, installation, and trial runs of all machinery (Jacketed boilers, Bi-directional Bilona churners, BMCs, and filling lines). Design the factory floor layout to ensure maximum hygiene and workflow efficiency (FSSAI/APEDA compliant).

2. Milk Procurement & Supply Chain:

Establish and manage a network of A2 milk farmers/clusters. Implement strict milk testing protocols (Fat, SNF, Adulteration) at the collection point.

3. Production & SOP Ownership:

Oversee the complete 30-hour Bilona cycle: Milk Boiling ? Inoculation ? Curdling ? Churning ? Clarification ? Cooling. Draft and enforce Standard Operating Procedures (SOPs) for every stage of production. Maintain 100% batch traceability and lab-testing records.

4. Team Building & Leadership:

Recruit, train, and manage a dedicated team of production staff, churners, and packaging personnel. Manage duty rosters and ensure a high-performance, hygienic work environment.

5. Quality & Compliance:

Ensure the unit is always "Audit-Ready" for FSSAI, Organic Certification, and Export inspections. Monitor yield ratios and minimize wastage.

Required Qualifications & Skills

Experience:

Minimum 5 years in Dairy/Ghee production. Specific experience in the

Bilona (Curd-churned) method

is mandatory.

Technical Knowledge:

Deep understanding of A2 milk properties, fermentation science, and fat recovery.

Education:

Degree/Diploma in Dairy Technology, Food Science, or a related field is preferred but not mandatory if you have extensive practical experience.

Leadership:

Proven ability to manage rural workforces and farmer relations.

Language:

Fluency in

Bengali

is essential for local coordination; basic English/Hindi for reporting.
