Key Responsibilities:
Culinary Leadership: Oversee all kitchen operations, from food preparation and cooking to inventory management and staff training.
Menu Excellence: Take ownership of our signature dishes, especially Thalassery Biryani, meals, appam, and authentic fish curry, ensuring consistency and exceptional quality.
Malabar Specialization: Expertly prepare a range of traditional Malabar snacks, including Pazham Pori and other popular items.
Quality & Consistency: Maintain the highest standards of food quality, taste, and presentation that our cafe is known for.
Team Management: Lead and inspire the kitchen staff, fostering a positive, disciplined, and highly efficient working environment.
Cost Management: Monitor food costs, reduce waste, and manage kitchen inventory to ensure profitability.
Creative Input: Contribute new ideas and dishes that blend traditional flavors with modern culinary trends to keep our menu fresh and exciting.
Required Skills & Experience:
Proven experience as a Head Chef, Sous Chef, or a similar leadership role, preferably in a Kerala or South Indian restaurant.
Deep and authentic knowledge of Kerala and Malabar cooking techniques and ingredients.
Demonstrable expertise in preparing Thalassery Biryani is a must.
Strong understanding of food safety, sanitation, and hygiene standards.
Excellent leadership, communication, and organizational skills.
A passion for food that extends beyond the kitchen, with a desire to create memorable dining experiences.
