The Commis II (Chinese Cuisine) supports the Chinese section of the kitchen by preparing high-quality dishes, ensuring proper mise-en-place, and maintaining hygiene and safety standards. The role contributes to delivering authentic and consistent Chinese cuisine aligned with the five-star culinary standards of Gokulam Grand Trivandrum.
Key ResponsibilitiesFood Preparation & Production
Assist in the preparation and cooking of a wide range of Chinese dishes, including stir-fries, dim sum, soups, and wok-based preparations.
Ensure all ingredients are available, properly cleaned, cut, and stored as per the menu requirements.
Follow recipes, portion control, and presentation guidelines set by the Chef de Partie or Sous Chef.
Assist in menu mise-en-place and daily operational requirements.
Kitchen Operations & Support
Maintain cleanliness and organization of the Chinese section, equipment, and workstations.
Ensure proper labeling, storage, and rotation of ingredients to minimize wastage (FIFO system).
Support the senior chefs during busy service periods and special events.
Handle basic butchery, vegetable cuts, and sauce preparation for Chinese cuisine.
Quality, Hygiene & Safety
Adhere to HACCP standards, food safety norms, and personal hygiene guidelines at all times.
Ensure safe operation of kitchen equipment such as wok burners, steamers, and fryers.
Report any malfunctioning equipment or safety hazards to the Chef on duty.
Teamwork & Communication
Coordinate effectively with colleagues within the Chinese section and the broader kitchen team.
Maintain a positive working environment and assist junior team members when required.
Communicate shortages, preparation needs, and menu changes promptly to the supervisor.
RequirementsEducation & Experience
Diploma or Certificate in Culinary Arts or Hotel Management preferred.
1-2 years of experience working in a Chinese/Asian specialty kitchen in a luxury or business-class hotel.
Strong knowledge of Chinese cooking techniques, wok handling, sauces, and flavor profiles.
Skills & Competencies
Basic to intermediate wok skills and understanding of Chinese cuisine fundamentals.
Knowledge of food hygiene standards and kitchen safety practices.
Ability to follow instructions, work under pressure, and handle fast-paced service operations.
Good teamwork, discipline, and willingness to learn.
