Job Purpose

The Commis I - South Indian Cuisine is responsible for preparing, cooking, and presenting authentic South Indian dishes while maintaining the highest standards of food quality, hygiene, and consistency as per the brand standards of Gokulam Grand Trivandrum.

Key Responsibilities

Prepare and cook South Indian dishes including breakfast, lunch, dinner, and live counter items as per hotel standards. Assist the Chef de Partie and Sous Chef in daily kitchen operations. Ensure consistency in taste, portioning, and presentation of all dishes. Follow standardized recipes and cooking procedures. Maintain high standards of hygiene, sanitation, and food safety (HACCP guidelines). Ensure proper storage, labeling, and rotation of food items (FIFO). Assist in mise en place preparation and timely service during peak hours. Minimize wastage and report any spoilage or shortages to seniors. Ensure proper use and maintenance of kitchen equipment. Comply with hotel policies, safety regulations, and grooming standards. Support training of junior kitchen staff when required.

Qualifications & Experience

Education:

Diploma / Certificate in Hotel Management or Culinary Arts preferred.

Experience:

Minimum 1

-2 years

of experience as Commis I or equivalent in a reputed hotel or restaurant. Prior experience in a

4-star or 5-star hotel

will be an added advantage.

Working Conditions

Willingness to work in shifts, including weekends and public holidays. Ability to stand for long hours and work in a fast-paced kitchen environment.

Pay: ₹23,000.00 - ₹25,000.00 per month
