Position Summary
The Commis I (Chinese Section) is responsible for preparing and cooking authentic Chinese dishes in accordance with established recipes, quality standards, and food safety guidelines. The role involves assisting senior chefs in daily operations, maintaining cleanliness and organization in the kitchen, and ensuring consistency and excellence in all menu items.
Key Responsibilities
Prepare mise en place for daily operations, including cutting vegetables, marinating meats, and preparing sauces according to recipes.
Cook a variety of Chinese dishes (e.g., Cantonese, Sichuan, Hunan, or other regional cuisines) under the supervision of senior chefs.
Ensure all dishes are prepared and presented according to the restaurant's quality and presentation standards.
Assist in receiving and storing kitchen supplies and ingredients, ensuring proper labeling and rotation (FIFO).
Maintain a clean and organized work area at all times, following hygiene and safety standards (HACCP).
Assist in controlling wastage and portion sizes to support cost control initiatives.
Communicate effectively with team members to ensure smooth kitchen operations.
Support other kitchen sections when required, especially during peak service periods.
Attend training sessions and contribute to continuous improvement in culinary skills and techniques.
Qualifications and Skills
Diploma or certificate in Culinary Arts or equivalent professional training.
Minimum 1-2 years of experience in a Chinese kitchen or similar environment.
Strong knowledge of Chinese cooking methods, ingredients, and flavor profiles (e.g., wok cooking, steaming, roasting).
Good understanding of food hygiene and safety practices.
Ability to work under pressure in a fast-paced kitchen.
Team player with a positive attitude and willingness to learn.
Basic communication skills in English; knowledge of Mandarin or Cantonese is an advantage.
Physical Requirements
Must be able to stand for extended periods.
Ability to lift and carry up to 25 kg.
Work in a hot, fast-paced kitchen environment.
