Prepare and cook Kerala dishes (appam, puttu, kadala curry, avial, vegetable stew, parotta, fish curry, thoran, sambar).
Maintain proper
mise-en-place
for both Tamil and Kerala sections.
Ensure taste, consistency, and presentation as per standard recipes.
Handle the South Indian station independently during service hours.
Maintain cleanliness, hygiene, and safe food storage.
Guide junior commis during prep and service.
Skills Required
Strong knowledge of Tamil Nadu & Kerala authentic dishes.
Good dosa/appam/parotta making skills.
Ability to work fast during breakfast and peak hours.
Knowledge of basic hygiene and food safety (FSSAI).
