Commie 2 (Italian) is responsible for assisting in the preparation, cooking, and presentation of authentic Italian dishes under the supervision of senior chefs. The role ensures high standards of food quality, hygiene, and consistency while supporting daily kitchen operations. The Commie 2 contributes to mise en place, proper storage of ingredients, and maintaining a clean and organized workstation. This position requires passion for Italian cuisine, teamwork, and the ability to perform effectively in a fast-paced kitchen environment.
Key Responsibilities:
Assist in preparing classic Italian dishes such as pasta, risotto, pizzas, sauces, antipasti, and desserts.
Execute mise en place tasks (chopping, slicing, pasta preparation, dough making, stock preparation).
Maintain portion control, recipe standards, and food presentation guidelines.
Follow food safety and hygiene practices (HACCP standards).
Store ingredients properly and monitor freshness to minimize wastage.
Support Chef de Partie in daily kitchen operations.
Keep workstations clean, organized, and well-stocked.
Assist in receiving, checking, and storing deliveries.
Requirements:
1-2 years of experience in a professional kitchen (Italian cuisine experience is an advantage).
Basic knowledge of Italian cooking methods (pasta, pizza, risotto, sauces, antipasti).
Familiarity with Italian ingredients (olive oil, herbs, cheeses, cured meats, fresh pasta).
Good knife skills and mise en place discipline.
Ability to follow recipes and instructions accurately.
Knowledge of food safety, hygiene, and HACCP standards.
Team player with good communication skills.
Ability to work under pressure in a fast-paced kitchen environment.
Physically fit to handle long hours and demanding kitchen tasks.
Passion for Italian cuisine and eagerness to learn.
