The Commie 2 (Indian Cuisine) is responsible for assisting in the preparation, cooking, and presentation of authentic Indian dishes while maintaining the highest standards of hygiene, quality, and consistency. This role supports senior chefs and ensures smooth kitchen operations, focusing on Indian curries, tandoor, breads, snacks, and regional specialties.
Key Responsibilities:
Assist in the preparation and cooking of Indian dishes under the guidance of senior chefs.
Maintain knowledge of traditional and regional Indian recipes, spices, and cooking techniques.
Handle mise-en-place (pre-preparation of ingredients) for assigned sections.
Operate kitchen equipment safely and efficiently (tandoor, fryer, grill, etc.).
Ensure consistency in taste, texture, and presentation of dishes.
Uphold food safety and hygiene standards in compliance with HACCP guidelines.
Monitor stock levels, minimize wastage, and ensure proper storage of ingredients.
Assist in training and guiding Commie III and kitchen helpers when required.
Maintain cleanliness and organization in the assigned workstation.
Requirements:
1-2 years of experience in Indian cuisine, preferably in hotels or fine dining.
Knowledge of Indian spices, gravies, tandoor, breads, and regional dishes.
Basic knife skills and ingredient preparation.
Understanding of food safety, hygiene, and HACCP standards.
Basic English communication skills.
Ability to work under pressure in a fast-paced kitchen.
