The Commie 1 (Sushi) is responsible for assisting in the preparation, presentation, and service of sushi and related Japanese dishes, ensuring high standards of food quality, hygiene, and customer satisfaction. This role works closely with the Sushi Chef and kitchen team to deliver authentic and creative sushi offerings.
Key Responsibilities:
Assist in preparing sushi rice, slicing fish, and assembling sushi rolls, nigiri, and sashimi.
Maintain mise en place and ensure all ingredients are fresh, properly stored, and available for service.
Follow recipes, portion standards, and presentation guidelines.
Ensure cleanliness and organization of the sushi station at all times.
Adhere to food safety, HACCP, and hygiene standards.
Support senior chefs in menu development, new dish trials, and daily operations.
Minimize waste and control portion sizes in line with cost controls.
Communicate effectively with team members and assist other kitchen sections when required.
Uphold company standards of service, hospitality, and professionalism.
Requirements:
Prior experience in a sushi or Japanese restaurant (minimum 1-2 years).
Knowledge of Japanese cuisine, sushi techniques, knife handling, and ingredient selection.
Ability to work in a fast-paced environment with attention to detail.
Basic knowledge of food safety and hygiene standards.
Team player with a positive attitude and willingness to learn.
Flexibility to work shifts, weekends, and holidays.
