Job Description

The Commis I - Italian Cuisine is responsible for preparing, cooking, and presenting high-quality Italian dishes under the guidance of senior chefs. This role ensures consistency, adherence to recipes, and compliance with hygiene and safety standards in the kitchen.

Key Responsibilities:

Prepare, cook, and present authentic Italian dishes (pasta, risotto, pizza, antipasti, sauces, etc.) as per standard recipes and plating guidelines. Assist in menu planning and development of Italian specials. Maintain mise-en-place and ensure readiness for service. Monitor and control food quality, portion sizes, and waste. Follow kitchen SOPs, hygiene, and HACCP standards at all times. Assist senior chefs during peak service periods and support other kitchen sections when required. Ensure proper storage, labeling, and rotation of ingredients. Maintain cleanliness and organization of workstations and kitchen equipment. Support in training junior staff/trainees on Italian cooking basics.

Requirements:

Proven experience as a Commis I / II or similar role in an Italian or fine-dining restaurant. Strong knowledge of Italian cooking techniques, ingredients, and traditional recipes. Culinary degree/diploma or equivalent certification preferred. Ability to work in a fast-paced environment with attention to detail. Good communication and teamwork skills. Flexibility to work shifts, weekends, and holidays.

Skills & Competencies:

Passion for Italian cuisine and creativity in presentation. Knowledge of pasta-making, sauce preparation, wood-fired pizza (preferred). Strong organizational and time-management abilities. Awareness of food safety and sanitation standards.
