Job Description

The Commis Chef - South Indian Cuisine assists in the preparation, cooking, and presentation of authentic South Indian dishes while maintaining hotel quality standards, hygiene, and food safety. The role supports senior chefs in daily kitchen operations and ensures consistency in taste, texture, and presentation.

Food Preparation & Cooking

Assist in preparing South Indian dishes such as

idli, dosa, vada, uttapam, sambhar, rasam, chutneys, curries, rice varieties, and tiffin items

Follow standard recipes and portion control as per hotel guidelines Support live counters and buffet service when required Ensure timely preparation for breakfast, lunch, dinner, and banquets
Kitchen Operations

Assist senior chefs in daily mise en place Maintain cleanliness of workstations, equipment, and utensils Follow FIFO and proper storage procedures Help with stock rotation and basic inventory checks
Hygiene & Safety

Follow

food safety, HACCP, and hygiene standards

strictly Ensure personal hygiene and correct uniform standards Handle raw materials safely to prevent contamination
Teamwork & Learning

Work cooperatively with other kitchen staff Take instructions from senior chefs and learn hotel SOPs Assist in training new staff or helpers when required
