Job Purpose
The Commi 1 - South Indian Focus is a skilled kitchen professional responsible for independently preparing, cooking, and presenting key South Indian dishes such as dosas, idlis, vadas, chutneys, and traditional South Indian thalis. The role requires a deep understanding of regional cuisine, attention to detail, time management, and the ability to guide junior kitchen staff. The Commi 1 will work under the direction of the CDP/Sous Chef to maintain food quality, consistency, and hygiene standards.
Key Responsibilities
1. Food Preparation & Cooking
Ensure timely preparation and consistent quality of South Indian dishes.
Prepare a variety of South Indian breakfast and meal items including dosa, vada, upma, idli, pongal, and sambar
Maintain consistency in taste, portioning, and presentation according to company recipes and SOPs
Plate dishes attractively and ensure they are served hot and fresh
Adjust seasoning and textures as needed based on feedback and menu development
2. Kitchen Operations & Coordination
Run the assigned section smoothly and support overall kitchen flow.
Coordinate with the service team to ensure timely order execution
Manage mise-en-place efficiently for breakfast and lunch services
Communicate with CDP on prep levels, shortages, or challenges
Maintain checklist of opening and closing tasks in your section
3. Inventory & Stock Monitoring
Maintain optimal levels of raw materials with minimal wastage.
Monitor daily stock usage and report discrepancies to the kitchen in-charge
Ensure FIFO method is followed for perishables and semi-prepared items
Requisition ingredients in a timely manner and avoid last-minute shortages
Safely store and label all food products in compliance with hygiene protocols
4. Team Support & Mentorship
Help develop junior commis and maintain discipline in the section.
Guide Commi 2 / Commi 3 and kitchen helpers in prep tasks and hygiene practices
Ensure kitchen teamwork and cooperation during rush hours
Act as a role model in kitchen conduct, punctuality, and work ethics
Support training of new hires in your section
5. Hygiene, Safety & Compliance
Ensure 100% adherence to food safety, fire safety, and cleanliness.
Maintain a clean and organized workstation at all times
Follow personal hygiene and grooming standards as per kitchen policy
Use gloves, aprons, and sanitizers as per food safety guidelines
Report and manage any maintenance or safety concerns in kitchen equipment
Requirements
Minimum 2 years of hands-on experience in a professional kitchen (South Indian focus is a must)
Proficiency in dosa and idli batter preparation, tawa handling, chutneys, and gravies
Strong knowledge of kitchen hygiene practices and food safety standards (FSSAI compliance)
Ability to work in fast-paced, high-volume environments (especially breakfast service)
Excellent multitasking and time management skills
Team player with leadership traits and problem-solving ability
Flexibility to work in rotating shifts, weekends, and festival days

Pay: ₹21,000.00 - ₹23,000.00 per month
