: Commi 1 - Batter Production

Role Overview:



The Commi 1 - Batter Production will be responsible for preparing, fermenting, and maintaining high-quality batter required for South Indian dishes such as idli, dosa, uttapam, vada, etc. This role ensures consistency, hygiene, and timely supply of batter to the kitchen based on daily operational needs.

Key Responsibilities:



1. Batter Preparation & Production



Prepare daily batter for dosa, idli, uttapam, vada, appam, etc., as per standard recipes. Clean, soak, grind, and mix rice, lentils, and other ingredients using commercial grinders. Maintain correct ratios and consistency according to Malgudi's SOPs. Monitor fermentation process and ensure batter quality is consistent.

2. Quality Control



Conduct regular checks on texture, aroma, fermentation levels, and freshness. Ensure no sour or spoiled batter is used; discard any batches failing QC. Follow FIFO and maintain daily production logs.

3. Hygiene & Safety



Maintain strict hygiene while handling ingredients and equipment. Ensure sanitation of grinders, containers, measuring tools, and workstations. Follow food safety guidelines, temperature control, and storage protocols. Label all batches with production date/time.

4. Inventory & Coordination



Track daily raw material consumption (rice, urad dal, methi, poha, etc.). Communicate requirements to the store or kitchen in-charge for replenishment. Coordinate with the hot kitchen team to ensure timely batter supply.

5. Equipment Handling



Operate wet grinders, dough mixers, chillers, and fermentation units safely. Report equipment issues immediately to the chef or maintenance team.

6. Documentation & Reporting



Maintain production sheets, wastage logs, and cleaning checklists. Assist with monthly stock counts and audits.

Skills & Qualifications:



Minimum 1-2 years' experience in batter production or South Indian kitchen. Knowledge of grinding, fermentation, and batter consistency. Basic understanding of food safety, hygiene, and FIFO/LIFO. Ability to work under pressure in a fast-paced environment. Strong attention to detail.

Physical Requirements:



Ability to lift heavy ingredients/equipment (20-25 kg). Standing for long working hours. Comfortable working in a production kitchen setup.

Pay: ?18,000.00 - ?25,000.00 per month
