We're seeking a skilled Chinese Chef de Partie (CDP) to lead our Chinese cuisine section, ensuring outstanding dishes and efficient kitchen operations. Job Summary: As a Chinese Chef de Partie at Delight Restaurant, you will oversee the preparation of Chinese dishes, manage kitchen operations for the Chinese section, and ensure high-quality food standards. The ideal candidate will have expertise in Chinese cuisine, stock management, and kitchen management, contributing to a seamless and vibrant kitchen environment in Kota's bustling dining scene. Key Responsibilities: Prepare and oversee the cooking of authentic Chinese dishes (e.g., stir-fries, dim sum, noodles, and sauces), ensuring consistency and quality. Manage inventory and stock for the Chinese section, including ordering ingredients, tracking stock levels, minimizing wastage, and conducting regular audits to control costs. Oversee kitchen management tasks specific to Chinese cuisine, such as recipe standardization, portion control, and maintenance of woks and other equipment. Ensure compliance with food safety regulations (e.g., FSSAI standards) and maintain a clean, organized workstation. Control food costs through effective stock rotation (FIFO), vendor coordination, and waste reduction strategies. Supervise and train junior kitchen staff in Chinese cooking techniques and kitchen operations. Collaborate with the Kitchen Supervisor and front-of-house staff to ensure smooth service during peak hours. Conduct daily inspections of the Chinese section for cleanliness, organization, and readiness. Qualifications and Skills: Minimum 2-3 years of experience as a Chinese Chef, Chef de Partie, or similar role in a restaurant specializing in Chinese cuisine. Strong expertise in stock management, including inventory control, sourcing authentic Chinese ingredients, and cost optimization. Proven kitchen management skills, with experience in workflow planning, staff supervision, and operational efficiency in a Chinese kitchen. In-depth knowledge of Chinese cooking techniques, ingredients, and presentation styles (e.g., Cantonese, Sichuan, or Indo-Chinese). Familiarity with food safety standards (FSSAI certification or equivalent is a plus). Strong leadership and communication skills to guide and motivate kitchen staff. Ability to work in a fast-paced environment, with flexibility for evening, weekend, and holiday shifts. Basic computer skills for inventory management software or reporting.
