Key Responsibilities:
Prepare and cook a wide range of Chinese dishes, including Sichuan, Cantonese, Hunan, or other regional specialties.
Ensure food is prepared and presented according to hotel standards.
Manage mise-en-place, food preparation, and cooking for lunch and dinner services.
Maintain hygiene and safety standards as per hotel and food safety regulations.
Monitor inventory levels and coordinate with the store/purchase department for requisitions.
Assist in the development and updating of Chinese cuisine menu offerings.
Train and supervise junior kitchen staff and ensure consistency in food quality.
Minimize food waste and manage kitchen operations efficiently.
Ensure cleanliness of workstations, kitchen equipment, and utensils.
Requirements:
Proven experience (3-5 years) as a Chinese Chef in a hotel or fine-dining restaurant.
Culinary diploma or relevant certification from a recognized institute.
Expertise in traditional and modern Chinese cooking techniques.
Good understanding of food costing, kitchen management, and hygiene standards.
Ability to work under pressure in a fast-paced environment.
Team player with strong leadership and communication skills.
Flexibility to work in shifts, weekends, and holidays.
Preferred Skills:
Knowledge of other Asian cuisines is a plus.
Experience in live cooking stations, banquets, or specialty theme nights.
