Kerala Chemmeen is a fine-dining concept focused on elevated Malabar and coastal Kerala cuisine. We blend traditional techniques with refined presentation and contemporary touches, using premium ingredients and meticulous service standards.

Role overview

Lead the execution of Kerala specialty dishes at fine-dining standards. Deliver consistent, high-quality flavors and sophisticated plating while supporting menu development, ingredient sourcing, and team training. A deep working knowledge of Thalassery biriyani and major Malayali dishes is essential.

Key responsibilities

- Execute and refine signature dishes including Thalassery biriyani, Malabar seafood specialties, and classic Malayali items with fine-dining presentation.

- Translate traditional recipes into plated courses suitable for a tasting or a la carte menu.

- Maintain strict hygiene and food-safety standards (HACCP preferred).

- Source and manage premium ingredients--local seafood, speciality rice, spices--and oversee storage and rotation.

- Work closely with Head/Sous Chef on menu development, costing, portion control, and seasonal tasting menus.

- Train and mentor junior cooks in refined techniques, mise en place, and plating consistency.

- Ensure timely service coordination with front-of-house for multi-course meals and degustations.

- Monitor inventory, minimize waste, and maintain cost targets within the allocated budget.

Requirements

- 3-7 years' professional culinary experience, with at least 2 years in a fine-dining or premium kitchen.

- Proven expertise in Kerala/Malabar cuisine, especially Thalassery biriyani and coastal seafood preparations.

- Strong plating and presentation skills; attention to detail and consistency.

- Knowledge of spice blends, coconut-based gravies, tempering, and seafood handling.

- Food-safety certification and familiarity with HACCP practices preferred.

- Leadership ability, calm under pressure, and good communication skills. Malayalam knowledge is a plus.

- Willingness to work evenings, weekends, and rotational shifts.
