We are seeking a strong leader and specialist in Italian wood-fired pizza to head our pizza section. This role goes beyond cooking--it's about leading a team, driving standards, and making sure every pizza that leaves the oven represents the brand at its absolute best.
The Pizza CDP will own the entire pizza station: dough management, team training, service execution, and innovation. You'll set the pace, mentor juniors, and ensure consistency across high-volume operations while pushing culinary creativity.

Key Responsibilities
Leadership & Team Management
Lead the pizza section, managing a small team of commis and helpers.
Train, coach, and upskill team members on dough handling, stretching, baking, and plating.
Allocate section duties and ensure smooth handovers between shifts.
Operational Excellence
Oversee daily dough prep, fermentation, portioning, and readiness for service.
Manage the wood-fired oven, ensuring heat balance and perfect bakes during peak hours.
Maintain high standards of mise en place, portion control, and consistency.
Ensure compliance with food safety, hygiene, and HACCP protocols.
Innovation & Brand Representation
Collaborate with the Head Chef on menu development and seasonal pizza specials.
Bring creative ideas to elevate guest experience while keeping authenticity intact.
Be the "face of pizza" in the kitchen--ensuring every slice embodies the brand philosophy.
Stock & Cost Control
Monitor ingredient quality, freshness, and availability.
Manage section inventory, minimize wastage, and maintain food cost targets.
Coordinate with purchasing for timely stock replenishment.

Requirements
Experience: 3-5 years in professional kitchens, with at least 2 years in a leadership role (Pizza Chef/CDP/Sous Chef level).
Specialization: Proven expertise in Italian wood-fired pizza, dough fermentation, and oven management.
Skills: Strong leadership, people management, quality control, and service speed under pressure.
Mindset: Hands-on leader, high standards, calm under pressure, and obsessed with guest satisfaction.
Knowledge: HACCP, food safety, and cost control best practices.
