Responsibilities:
Grooming & Briefing:
Be well-groomed and wear a clean, well-ironed uniform during duty hours.
Conduct staff briefings before and after each shift (post-shift briefing not to exceed 10 minutes).
Inform team members about unavailable items, new dishes, or recipe updates.
Discuss any guest complaints from the previous day and ensure they are not repeated.
Operations:
Prepare all Indian dishes as per standard recipes and portion sizes.
Follow
FIFO (First In, First Out)
for all ingredients and materials.
Complete mise-en-place and pre-rush preparations on time.
Ensure all menu items are available and orders are prepared quickly and accurately.
Maintain quality, taste, and presentation standards at all times.
In the absence of the Head Chef, ensure ingredients are received as per specifications.
Maintain kitchen cleanliness and hygiene throughout the shift.
Store food properly with day dots and labels in chillers and freezers.
Clean chillers, freezers, and equipment regularly.
Serve food at the correct temperature and in appropriate crockery.
Requirements:
3-5 years of experience in Indian cuisine in a restaurant or hotel kitchen.
Strong knowledge of Indian curries, gravies, tandoor, and regional cooking styles.
Ability to manage a section independently and lead junior chefs.
Good communication and teamwork skills.
Must maintain cleanliness, hygiene, and discipline at work.
