Chef de Partie - Indian Cuisine

who understands

flavour depth, consistency, and calm execution

, and is comfortable working in a

small, high-quality resort kitchen environment

Role Overview



The CDP - Indian Cuisine will be responsible for managing the

Indian kitchen section

at Mai Kai, with hands-on expertise in

Indian gravies, tandoor, starters, and live service execution

. This role requires someone who can balance

quality cooking with resort-style service

, including set menus, AP meal plans, and private group dining.

Key Responsibilities



Prepare and execute

Indian gravies, tandoor items, kebabs, curries, and starters

as per Mai Kai standards Handle

day-to-day Indian section operations

during breakfast, lunch, and dinner services Ensure

consistency in taste, presentation, and portioning

across a la carte and set menus Work closely with the Resort Manager for

AP plans, group meals, events, and special requests

Maintain

strict hygiene, food safety, and cleanliness standards

in line with resort SOPs Plan

mise-en-place

, manage inventory usage, and minimise wastage Support menu execution for

weekend rush, celebrations, and curated dining experiences

Guide and supervise commis staff, ensuring smooth service flow Adapt dishes to guest preferences while respecting Mai Kai's flavour philosophy

Candidate Profile



5- 8 years of experience

in Indian cuisine (CDP or Senior Commis role) Strong hands-on knowledge of

Indian gravies, tandoor operations, marinades, and starters

Prior experience in a

resort, boutique hotel, or quality standalone restaurant

preferred Comfortable working in a

kitchen with high accountability and multitasking

Good understanding of

FSSAI norms, food safety, and hygiene practices

Calm under pressure, team-oriented, and quality-focused

Salary & Benefits



Salary:

Up to

?28,000 per month
