Oversee production and baking of breads, croissants, and other viennoiseries.
Ensure consistent quality, texture, and flavor of bakery items.
Organize daily mise en place and ensure all items are ready for service.
Train, guide, and monitor junior staff and commis assigned to the bakery section.
Ensure baking schedules are met and stock levels maintained.
Collaborate with Head Baker on new recipe development and seasonal updates.
Adhere to hygiene standards, cleaning schedules, and food safety regulations.
Monitor wastage and contribute to cost control through efficient practices.
Operate ovens, mixers, and other bakery equipment with care and responsibility.
