Key Duties & Responsibilities

Chef de Partie (CDP)



Oversee a specific section of the kitchen (e.g., grill, sauces, or pastry) Ensure high-quality food preparation and presentation Supervise and train commis and junior staff Maintain hygiene and safety standards Work with the Sous Chef to develop new recipes and menus Monitor stock and manage inventory for your section

Commis I (All Sections)



Assist CDPs in food preparation and cooking Follow standard recipes and presentation guidelines Ensure workstation is clean and organized Practice food safety and hygiene protocols Willingness to learn and grow in culinary techniques Prepare mise en place for service

Chinese & Tandoor Chefs



Expert in wok cooking / tandoor operations Ensure authentic taste and presentation Control wastage and portioning Maintain kitchen cleanliness and safety

Fusion Cuisine Chefs



Innovate and blend international and Indian cooking styles Create unique and modern dishes Maintain consistency in taste and presentation

Pantry Chefs



Prepare salads, sandwiches, cold plates, and desserts Manage chiller storage, FIFO methods, and garnishing Maintain freshness and visual appeal of items

South Indian CDPs & Commis



Expert knowledge in traditional South Indian dishes and breakfast items Ensure consistency and authentic flavors Prepare dosas, idlis, vadas, sambars, chutneys, and regional specialties Manage timing and flow for high-volume breakfast/lunch service

Candidate Requirements



Minimum 2-5 years of experience in a relevant role for CDP 1-3 years for Commis roles Knowledge of food hygiene (HACCP) standards Team player with a positive attitude and leadership qualities Good communication and coordination skills Willing to relocate to Kerala
