Assist the Culinary Director/ Executive Chef in overseeing the operations of the Continental kitchen in the resort's Food and Beverage department. - Supervise and coordinate the preparation of Continental cuisine dishes, ensuring high-quality standards and presentation. - Train and mentor kitchen staff in proper cooking techniques, food safety, and sanitation practices. - Collaborate with the culinary team to develop new menu items and specials while maintaining consistency in existing dishes. - Monitor inventory levels, order supplies, and manage raw material costs to meet budgetary goals. - Ensure compliance with health, hygiene and safety regulations in the kitchen and food preparation areas. - Assist in scheduling kitchen staff and coordinating kitchen operations during service hours. - Able to generate additional revenue through cuisine based initiatives, within or off-premises - Able to perform with high level of professionalism under busy schedule and hectic business. - Support the Executive Chef in menu planning, recipe development, and maintaining food quality standards. - Take the lead in the kitchen in the absence of the Executive Sous Chef.
