The ideal candidate will have in-depth knowledge of meat preparation, excellent knife skills, and a passion for high-quality food standards. This role is crucial to maintaining the integrity, taste, and presentation of our premium meat dishes.
Key Responsibilities:
Break down, cut, trim, bone, tie, and grind various meats including beef, lamb, pork, poultry, and seafood according to restaurant specifications.
Ensure proper portioning and presentation of meats for a la carte and set menu items.
Maintain freshness and quality by properly storing and labeling all meat products.
Collaborate closely with chefs to ensure menu consistency and to advise on meat cuts and availability.
Follow all safety and hygiene protocols, including sanitization of tools and surfaces.
Conduct daily stock checks, report spoilage or discrepancies, and assist with inventory management.
Monitor aging and curing processes where applicable.
Receive and inspect meat deliveries for quality, quantity, and compliance with restaurant standards.
Assist in menu development by recommending suitable cuts and meat presentation ideas.
Qualifications & Skills:
Minimum 3-5 years of professional butchery experience, preferably in luxury or fine-dining establishments.
Strong understanding of meat grades, cuts, anatomy, and cooking methods.
Knife mastery and a keen eye for detail.
Familiarity with HACCP protocols and food safety standards.
Ability to work under pressure in a fast-paced, high-demand environment.
Excellent communication skills and a team-oriented attitude.
Certification in Culinary Arts or Butchery (preferred but not mandatory).
