Job Summary:

The Butcher is responsible for the selection, breakdown, cutting, trimming, portioning, and storage of all meat, poultry, and seafood products. This role ensures that all products are prepared according to the kitchen's standards, cost control requirements, and food safety regulations.

Key Responsibilities:

Receive, inspect, and store meat, poultry, and seafood deliveries, ensuring quality and freshness. Break down carcasses and large cuts into smaller portions as per menu requirements. Trim, bone, grind, cut, and portion meats to specification for different cooking methods. Prepare marinated cuts, sausages, and specialty meat items. Monitor and control inventory of meat and seafood; ensure proper stock rotation (FIFO). Maintain cleanliness, organization, and hygiene of the butchery area in compliance with HACCP standards. Work closely with the Executive Chef and kitchen team to meet daily operational needs. Minimize wastage and follow cost-effective butchering practices. Ensure safe handling of knives, saws, grinders, and other butchery equipment. Train and guide junior staff assisting in the butchery section.

Skills & Qualifications:

Proven experience as a Butcher, Butchery Chef, or in a similar role. Strong knowledge of meat cuts, preparation methods, and storage standards. Skilled in handling knives and butchery equipment safely and efficiently. Understanding of food safety, hygiene, and HACCP guidelines. Ability to work in a cold environment for extended periods. Attention to detail and ability to meet portioning and presentation standards. Culinary training or certification in butchery preferred.

Physical Requirements:

Ability to lift heavy meat products and work in refrigerated environments. Manual dexterity and stamina for physically demanding tasks.

Pay: ₹10,000.00 - ₹15,000.00 per month
