Job Description

1. Baking & Production



Prepare, bake, and finish bread, rolls, pizza bases, cakes, cookies, and bakery items as per recipes. Ensure consistent texture, flavor, and appearance of all bakery products. Manage large-scale production for multiple outlets (if central kitchen-based). Monitor oven settings, fermentation, proofing, and baking times for quality output.

2. Quality & Standards



Maintain standard recipes and portion control to minimize wastage. Conduct quality checks for each batch before dispatch or service. Regularly test products to ensure freshness and shelf-life compliance. Implement plating/presentation guidelines for customer-facing bakery items.

3. Hygiene & Food Safety



Comply with

FSSAI / HACCP guidelines

in all bakery operations. Follow

FIFO/LIFO

for bakery ingredients (flour, yeast, butter, dairy, etc.). Ensure cleanliness and sanitation of workstations, ovens, mixers, and proofers. Enforce team adherence to personal hygiene and PPE standards.

4. Inventory & Cost Control



Maintain optimum stock levels of raw materials like flour, yeast, butter, and chocolate. Track consumption, monitor variances, and minimize wastage. Maintain food cost within budget without compromising quality. Coordinate with purchase team for vendor management and timely supplies.

5. Team & Supervision



Lead and supervise commis bakers, helpers, and trainees. Allocate daily production tasks and monitor output. Train team members on baking techniques, hygiene, and safety. Encourage teamwork and maintain discipline in the bakery unit.

6. Innovation & Development



Develop new bakery products in line with market trends (artisan breads, sourdough, healthy options). Introduce seasonal/occasional products (Christmas cakes, festive breads, themed bakery items). Experiment with dietary bakery products (gluten-free, sugar-free, vegan). Suggest cost-effective alternatives for ingredients while maintaining quality.

Pay: ₹20,000.00 - ₹35,000.00 per month
